I think that the "critical temperature" is very important when cooking in this course.

Making food is not the same as changing many details from uncooked to fully cooked.

Understanding temperature from an egg is an important process of food change.

All English courses are hard to understand But I can understand that there is a lot of knowledge in "Science & Cooking".
